I have to admit that over the years I was never a real fan of non-stick cookware until now. After watching the TV commerical with Chef Michael Symon on the Food Channel, I decided to give this pan a try. Hey, it's Calphalon...right!
Well, I'm really impressed. When they say "slide", they're not kidding. I have tried numerous recipes sans any oil or butter and with absolutely nothing sticking to the pan. Cleanup is also a breeze. I highly recommend this cookware to the non-stick aficionado.

Our Calphalon Unison Nonstick 12" Omelette Pan is so wonderful. It holds the spices in the food so well. It is a smooth cooker.

I've been around a lot of cookware, and I can honestly say this is THE best pan I've ever owned - period. Aside from the sturdy construction, it heats evenly. Nothing, I mean nothing, sticks to the pan. If you are serious about having a quality piece for your kitchen, this is a must have.

Returned the 1st pan because the bottom became warped after about 4 month, never heating the pan above med-high.
I returned the 2nd pan beacuse the non-stick coating startend coming off in spots after 3 months of use, only using teflon tools.
I'm about to return the 3rd pan again because of a scratched up non-stick coating after about 3 months.
I will ask for it to be replaced by a stainless pan.

I use this skillet for browning and cooking. I do not own a Unison "sear" pan. Both of mine are "slide". The only concern I have is that the finish is easily scratched. I only use the proper utensils, too. These scratches are more cosmetic, so far. This did not keep me from buying my second "slide" skillet.
