This is my first Unison Purchase, I like the sear performance. You can deglaze the pan with the same results as stainless steel. I own quite a bit of Calphalon One, both infused and non stick. I would say the Unison is a little easier to use, but not quite the same quality as Calphalon One

Upon receiving the Saute Pan I was shocked that a company such as Calphalon would send me a FREE pan - this is not an inexpensive pan. So I really appreciated the time and effort Calphalon proved to me that they valued my opinion of this pan.
My first time using this pan, I sautéed leeks for a potato dish. My husband used the pan to cook our second dish - his delicious breakfast potatoes. We continue to use this pan daily, even tonight as I made 'easy lasagna' I was more confident when I used this pan to prepare a homemade meal for our twin boys.
Why am I happy to choose this pan every time I cook? It helps me be a better cook! The pan cooks food evenly, it's almost as if the pan embraces food, and slowly brings the ingredients to life. The surface is unlike any other surface I've cooked in - it's not a regular nonstick pan. It does have texture, but food does not stick to it. I believe the pan sides, the straight sides, allow for the food to 'sit' and layer on flavors. Overall, I'm impressed with this pan, I'm thrilled that I have this in my collection of pots and pans. I own All-Clad and copper pans, but I will turn to Saute Pan to create delicious meals for my family.

What would be a good test for the Calphalon 3 quart sear/nonstick sauté pan and cover?
The family was tired of teriyaki salmon so the answer would be a dish requiring searing and making use of the cover too and coming up with a new flavor for the salmon and all that would require 20 minutes or less. The dish I chose to make would involve searing salmon skin side down, browning onions, and yet sealing the moisture into the salmon in other words sautéing while covered.
The onions came out perfectly brown and yet very moist. Not the dried out flakes from the past. The salmon skin was well crisped allowing me to peel it off prior to serving. The salmon itself was incredibly moist helped along because the seal created by the glass cover was perfect in maintaining the moisture within the fish.
The result was a new family favorite: Salmon with Raspberry Wasabi Mustard.
Ingredients:
Raspberry Wasabi Mustard Dipping Sauce or other prepared dipping sauce from your grocer
4 teaspoons fresh dill chopped
4 tablespoons diced shallot, or onion
1 minced clove garlic
Olive oil
1 lb salmon
Sauté 4 tablespoons of shallots or onions in 1 tsp olive oil or more for one minute on medium, add garlic and continue cooking for one minute. Turn heat to low and place cover on pan and cook on low for 4 minutes. Remove onion/garlic mixture to small dish.
With some olive oil on your hands, rubbed the oil on all sides of the salmon, sprinkle and press on the non skin side of the salmon first the chopped dill and then the onion garlic mixture.
Heat the 3 quart sear/nonstick sauté pan with 1 tablespoon of canola or olive oil on medium high for three minutes or so. Place the salmon skin side down in the pan and cook for 5 minutes. Remove salmon to a plate while readjusting the remaining oil in the pan and reducing the heat to medium- medium low. Return the salmon (onion/garlic/dill mixture down) to the sauté pan and cover for 3-5 minutes depending on the thickness of the fish. Remove cover, slide spatula under the skin and remove and dispose of the skin. If the fish still needs to cook a little more you can flip it and slightly brown the side from which the skin was removed.
Plate the salmon onion/garlic/dill side up, spread with the dipping sauce and listen to the rave reviews

I couldnt be happier with my new pan. It is a little small for a family of five, but the first thing I made in it was fried potatoes. I found that I needed very little oil and they turned out beautifully crispy brown on the outside and tasty in the middle. I find myself wishing I could afford the whole set, as I am sure I wouldn't be disappointed. I anticipate using this pan for MANY years to come.

The 3 quart saute pan is a great size for a wide variety of dishes. It's big enough to saute scallops or fish for a family, but not so huge that it takes up a lot of space in the kitchen. It was fabulous for caramelizing onions - no sticking at all led to delicious, soft brown onions with no mess! I had mixed success in searing scallops - I think the pan wasn't quite hot enough when I threw them on the pan, so they didn't turn out as beautiful as other pictures I've seen.
I'd recommend this pan to anyone looking for a great multifunctional pan.
Pros
- Extremely easy clean up. It's dishwasher safe, but you don't even need to use the dishwasher because it cleans up in an instant!
- Great size for one-pan dinners
- Nice surface that allows searing (unlike many other nonstick pans)
Cons
- Can't use metal utensils and need to be careful of surface

This pan is very heavy, which is great for cooking but a bit hard on my wrists. I have used this pan to make grilled cheese on both regular bread, and on rolls. It works great! Heat is evenly distributed for even browning. I put the lid on while the bread is browning, and the chease is melted by the time both sides are golden brown. No need to flip constantly! I also made stirfry rice, which turned out well, though the egg did stick a bit to the bottom, it came off easily when washed.
My only complaint is the handle on the lid gets very hot. I am used to pots and pans with stay-cool lid handles, and wish they had included that feature

I have really enjoyed cooking with the saute pan. I have some very old pots and pans and everything seems to stick on the bottom. This did not have anything sticking and to clean up was so easy. I will defintely be using this pan over my old one from now on.

This pan is the best pan I've used including some very pricy pans. It makes a really nice sear on steak, chicken and pork chops and the lid allows it to cook thru on the stove top...I haven't put it in the oven yet, I'm so not used to being able to. The lid is sturdy and good quality, the handles are sturdy and feel professional. I threw in a chicken breast, seasoned it and seared it, then added sliced mushrooms and covered...the chicken was moist with a nice sear and the mushrooms were perfect with a slightly crisp sear...I got compliments =)
I've done asparagus also....steamed in pan with the cover then remove lid and add brown sugar and butter...it cooked up the sauce nicely and cleaned easily. The cleaning is easy and I love the fact that the husband can throw it in the dishwasher...he's destroyed a few other non stick pans. I got a tiny scratch on the surface from a chicken bone....or the man...I was worried but it seemed to just rub out? I like this pan and will definitely buy more...would love a two burner griddle and a waffle iron...
This pan is a little small, I'd like a bigger one.

I've been really apprehensive to use a non-stick pan since there has been so much in the media about the dangers around the non-stick surface. I received the 3qt saute' pan and have used it several times to saute' shrimp and make sauces. The clean up is easy and it seemed to cook evenly. Since I have the pan - I'll continue to use it, but my preference would be not to use a non-stick pan.

I love the ergonomic and nice design, the curved side wall and handle. I cooked curry chicken with veggies, sauteed lamb steak with greens and Mediterranean pasta in it. I like specially, how easy it is to clean. You have to follow the instruction to heat it up first, before you put anything in it, even oil. I would highly recommend it!

I'm not a real experienced cook - I do general basic things and had some regular joe expectations of this pan. I got it out without reading the labels and was very disappointed in the weight, feel of the outside and interior coating. Wow what a pan! It's great for grilling and sauteying! I was expecting a non-stick pan but this does so much that they don't!
It is heavier but that seems to help the heat. The outside has a rough texture I don't love. The inside coating seems to be GREAT for grill purposes!

This deep pan is great for sauteing meats, but is also wonderful for sauce based dishes and steaming greens as well. I have left things on the stove for longer than intended and the pan cooked things evenly without burning. Clean up is a cinch as well and even stuck on spaghetti with sauce and chicken came off easily.
The lid also fits my other Calphalon pan, even though it is a more economical model. The glass lid allows me to watch what's cooking without lifting the lid prematurely and keeps spatters under control. The pan and the lid are heavy and work well. Overall, I am very happy with this product.

I've used my Calphalon Unison Nonstick 3 Qt. Saute Pan two times now...and keep looking for reasons to use it! My one complaint about non-stick pans is that I never get a good brown on meats. So when I used the saute pan to brown some chicken filets for a new recipe recently, I was quite pleased with the results. Nicely browned chicken with great flavor!
I also appreciate the complete information that came with the pan on how to take care of it and ensure its longevity.
I do look forward to using this pan more and would recommend it to anyone who is looking for a new non-stick saute pan!

I absolutely love this pan. I don't think I have met a piece of Calphalon cookware yet that I do not like. The product is exactly as described and the sides really help with the splatter effect that you can get from some pans. I'm very sensitive to splatter issues because of the set up of my kitchen and this pan seems to have no problems with it.
I most recently used it to saute large sliced mushrooms and it did it beautifully. This pot will get used often!

When I first looked at this pan, Ithought that it wouldn't be big enough for a family meal, but it surprisingly made a nice one pot meal. I didn't need to clean up multiple pans. I was really surprised at how nicely I was able to brown chicken in it too! I made a deliciously Lemon curry chicken that I browned on the stove top and finished it in the oven at 375 degrees. It turned out moist and fall off the bone while retaining the color of the vegetables. I like that the pan is so easy to clean too. The design also complements my modern kitchen.
My only con- the sides of the pan are high enough, but I still had splattering when I browned my chicken.

Love these pans! You can never have enough of these! Four would be ideal! These are great for making dinner for the family. Meat contain optimal juice and tenderness. Handle is great...didn't know they made handles that looked great and didn't burn you until I meet Calphalon. Now I keep running out and buying new products!!!

I just got this pot and I absolutely love it. It is definitely well-made and easy to clean. I love the 2 handles, for ease of use. I had a similar pot from another company, but the handle broke when the pot fell off the drying rack--I was crushed, but this pot is the perfect replacement. I can tell this pot is built to last.

AWESOME! That is the best description for this product. I used this pan to fry cubed steaks and make gravy for the mashed potatoes I also made in it. I love having that second handle to help me move it when full of food, without straining my wrist.
My daughter made fried okra in it the next night. We were both amazed at how little grease splatter we had when frying! It was as close to non-splatter as I think you could get while southern frying okra.
LOVE the non-stick and deep sides. The clear lid fits well and is nice and heavy too. Clean up was literally a breeze! SO EASY!!
This was my first experience with Calphalon and I must say I'm in love with it!

I LOVE the new pan for its ease of use and cleaning! And the higher sides and tight glass lid give wonderful results that I can SEE!!! Hooray!
The one thing I will say is that for the purposes of cooking one pan meals for a family of 4, I wish I'd gotten the larger size instead. This would be the best possible size for one pan meals for 2 people, or single component dish for a family. It's just a tiny bit undersize for the way I find myself using it right now.

So far, I've made two dishes using the Unison Nonstick 3 qt. Saute Pan. First, I made homemade meat sauce for pasta. It was the perfect size to fit sauce for my family of four.
Next, I made steaks. First, I applied a spice rub and seared the steaks in the pan on the stove. I then moved the pan into the oven until the steaks were done.
In both instances, I found the pan to be excellent at browning/searing the meat without any major sticking.
Cleanup was easy, too -- just scrape off any bits with a nylon scraper and pop the pan into the dishwasher.

I LOVED this pan. I love to cook professionally and this is my new favorite. I like that there are no hot spots in the pan, it heats the same all around. It truly is a non stick searing pan. I didn't think such a pan existed. I also like that it is dishwasher safe. I was a little nervous at first but it makes clean up so much easier.

When I received this pan, the nonstick coating put me off a bit at first. It is rougher than any nonstick I've seen. Otherwise, it looked pure Calphalon, solid and well-constructed.
When I fried up some pork chops and deglazed the pan, everything came up beautifully. Very even heating and great nonstick sauteing. I'm very pleased with this pan.

I received my pan yesterday. I currently use Calphalon as my daily cookware, but do not have the non-stick version. I used this pan this morning to cook breakfast for my family. What a great pan.
Nice even heat, the handles did not get hot. It was super easy to clean the bacon grease when we were finished using it.
I'd seriously consider adding some of the Unison pieces to my Calphalon collection. Calphalon makes a great product and this new line is fantastic!

Calphalon always offers quality products, and I have used the brand since I first got married 16 yrs ago. I got the Unison saute pan as promotional gift, and I cannot say enough good thigs about it. It is a heavy, good-looking, quality pan. It is excellent for its purposes, and retains heat very well. I made chicken and vegetables in it, and they came out great. The glass lid makes it easy to watch over the cooking process. The pan is easy to wash, non-stick, and could go into he oven as well. Thanks Calphalon!

I like that this pan is nonstick but safe to preheat. I also like that it seared my fish to a golden brown and while I was distracted with an issue with my kids the fish that would have burned in another pan was not. With how well it cooked my meat without burning, I am impressed with the lightweight feel of the pan. My other pans are so heavy I have to carry them with two hands to the table or hurt my wrist. It was also very easy to clean.

My husband has been getting into cooking, and he loves this saute pan. It is the perfect size to handle small and larger jobs for our family. Sauting vegetables is much easier to handle with this smaller and deeper pan.
