Solid Cooking Performance

Date:November 16, 2011
I was skeptical at first spending this much money on a wok, but after using it with a lid to do some fajita mix i was sold!
Its easy to control the heat with the lid on it. My chicken and beef cooked perfectly and then I tossed in the veggies and a little seasoning and water and it steamed the veggies perfectly with the lid on it. The non stick was awesome. After letting it sit on the stove on low for 20 minutes while everyone got what they wanted I let it cool and it cleaned right up with soap and water. My old wok always required a scrub but not with this unit.
The only thing negative about this unit is that it is HUGE! 13" of cooking surface is nice for my large family but I can't use the rear eye on my gas stove behind this behemoth. Also, you have to remember that the handles for the lids get hot after simmering for a while so you must use mitts to safely remove the lid. Also, it takes a while for this big boy to get heated up since its so large. Just be patient and the entire unit warms up nicely!
Awesome product!

Date:April 30, 2010
Large capacity. Easily accommodates dinner for six. Cleans up suprisingly well, even with a sticky sauce like a homemade barbeque sauce with molasses in the recipe--didn't burn or stick. Retains heat well. Cover fits nicely. Love the "helper" handle. Lid handle still relatively cool (when using on stove, not oven). Love the glass lid to look through without lifting cover. All in all, a great pan that's good for so much more than stir frying. Try it for soups and stews, and any entree you'd typically make in a 12" skillet.

Versatile Wok !

Date:April 30, 2010
I was a bit skeptical at first of a wok that doesn't have the traditional round bottom but after trying it out for the first time, I was highly impressed with the versatility it provides the user. I decided to use the wok to sear a marinated London broil, something I would not have been able to do in a more "traditional" wok and it turned out great. I was especially impressed with the quick, even cooking. The only thing that I was disappointed about was that it left burn marks in my pan. I'm not sure if that was due to user error or what. Fortunately, it still works great but definitely does not look as pretty as it did when I pulled it out of the box.
With that being said, the design is very ergonomic, sturdy and easy to use. On the downside, it is pretty heavy and large, making it difficult to store, but its function more than makes up for that!

Great Wok!

Date:April 28, 2010
I really like this wok. I love that I can use it on my gas range. It is a great size and the lid is very nice to have also. I also love the nonstick finish - I hardly have to use any oil - which makes for a nice crisp & healthy stir fry! I also like that I can put the whole dish, pan and all, in the oven. The only con I have is that it is a bit heavy, I wish it were lighter.

Versatile Wok Makes Superb Stir-Fry

Date:April 28, 2010
I own several woks, and the Calphalon Unison is now my favorite! Here are a few reasons why:
- The handle stays cool, even when there's piping hot peanut oil in the wok.
- The lid keeps the veggies moist, but not soggy, so that the stir-fry doesn't taste dry or soupy.
- It heats all of the food evenly which makes for a speedy dinner, and...
- It fits in my dishwasher!
When it comes to making a mid-week gourmet dinner, one couldn't ask for a better wok.

Great pan, but too large for the average kitchen

Date:April 28, 2010
This is a great pan for cooking a stirfry and many other dishes. It cleans up like a dream with just a quick wipe. I have no complaints about the quality of the pan. Since we cook 90 % of our meals at home, I'm sure this pan could have easily become one of our favorites. However, I can't find a place to store it. None of my cabinets or drawers are more than 12" wide and living in a traditional New England Cape, I have low ceilings so hanging my pans from a pot rack is simply not an option. If it had 2 of the smaller stock pot handles instead of the long handle, I might be able to fit it in one of my taller cabinets. Unfortunately, I may have to pass this lovely pan along to someone with a larger house and kitchen.

We don't cook asian type foods at our house, which you would usually use a wok for, so we tried using it for other dishes. It worked great. Easy to clean, no sticking, no hot spots. I love it. I will say that it is a bit big and a tad heavy, but I have never used a wok before so I am not sure if that is a good thing or bad thing.

Love the nonstick wok

Date:April 23, 2010
Way easier to use compared to my old wok. I hated seasoning my wok. This nonstick wok is much easier to use & I love the heaviness of it. The only reason I gave it 4 instead of 5 stars is b/c I the handle on the wok makes it hard to find a good storage place. I had to rearrange most of my cabinets to find a large enough place for it.

A great wok!

Date:April 22, 2010
I received this wok as part of the Calphalon test panel. When it was delivered, my first thought was, "Whoa, that pan is HUGE!" My kitchen is small and with two small kids under-foot I don't have a lot of time and space to maneuver, so adding a large pan to the mix isn't always my top priority. I was also concerned about how heavy this pan is.
But then I cooked with it.
It is amazing! I found the size perfect for accommodating a stir-fry for a family of four with no spill-overs. It was actually easier to maneuver than some of my slightly smaller pans and the weight was not so heavy that I couldn't lift the pan, full of food -- and I'm no body builder, so that's saying something!
This pan heats very evenly, with no hot spots. At least one review here indicated that when using the lid, the veggies turned out soggy. This was absolutely not the case for me -- and my culinary timing leaves a bit to be desired, so I ended up with the lid on and heat off while I finished prepping the meal. The veggies came out perfectly tender-crisp and the shrimp was cooked thoroughly.
After devouring our meal, it was time for cleanup. This is the part I generally avoid, but for the sake of writing a review, I volunteered for dish-duty. I was astonished at how easily this pan cleans up. You know that spot where the handles are riveted to the pan? Well, that's the part I hate -- little bits of sauce and food get built up around there and you have to chisel it off while protecting the nonstick surface around it. Not so with this pan. Even after having sat with sauce in it for an hour while we ate and got kids settled in for the night, this pan cleaned up effortlessly -- no elbow-grease whatsoever!
Not only would I recommend this pan to a friend, but the whole set is now on my wish-list!

This wok is really nice for stir fries and fried rice. It's easy to clean, and the angle is perfect for flipping the food. The only downside (which has it's benefits) is that it's heavy, which makes it hard to flip, especially with the lid on.

Great for One Dish Meals!

Date:April 17, 2010
This product is terrific for cooking a variety of one dish meals! Not just limited to asian recipes, and stir-fry, our family has cooked a variety of food - seafood soup, Spanish dishes, and more. The depth allows for great sauces to simmer into the food, and it is particularly good for recipes where you start by softening onions and garlic and then add other ingredients, because of the small surface area at the bottom but still with good depth to add liquid. It's our favorite!

I used the WOK to prepare a chicken stir fry with LOADS of vegetables. It cooked everything evenly and I especially liked that as much food as I had in the pan it never spilled over the edges as I cooked and mixed.
Itt was large enough to cook a big meal for the 6 of us with plenty of leftovers for lunch the next day. Clean up was a breeze. I look forward to cooking soups and just making pasta in this WOK!

Great ideas melded into one wok - non-stick, flat-bottom, multi-functional, glass lid and a perfect size!
This is not a wok you will have to find storage space for and only dig it out for a stir-fry. I've found this is a very functional piece of cookware - stir fry, sauces, noodle dishes, eggs, etc. It's great on an electric stove! The size allows for a family meal with a quick and easy clean up!

Eating Healthier With a Wok

Date:April 13, 2010
My husband and I are trying to eat healthier, so we were thrilled to be able to try out some stir fry recipes in our new wok. I made an orange chicken and veggie stir fry and was very happy with how the wok performed. It can hold a large volume of ingredients which is helpful when trying to feed a large family and have some leftovers for lunches! The handle never got hot so I was able to swirl the ingredients around with ease and we both found that the heat was very evenly distributed throughout the cooking area. The wok is quite heavy, so I had a bit of difficulty lifting it with one hand when pouring the finished dish into our bowls, but my husband did not find this to be an issue after he prepared a yummy batch of chicken fried rice.
Cleaning and maintaining this wok is much easier than I thought it would be. While I'm thrilled to know that I can wash it in the dishwasher, I think I'll continue to wash it by hand since the size of it would prohibit me from being able to fit much else in the bottom rack of my small dishwasher.
Overall, this is a great product. I'm looking forward to trying many new recipes over the coming years.

A Helpful Cooking Tool

Lately I have been cooking with older cookware which has seen its day. But, cooking with my new Calphalon Unison Nonstick 13" wok has made cooking fun again and I think my food is tasting better, too. I have made a lot of soup and stir fries with the wok and they have all come out very yummy. One of the best features, though, is how easy it is to clean after wards.

I love to cook in a wok, but having a flat top ceramic stove made it a challenge. The flat bottom on this wok gave me stability and even heating, and the nonstick surface was a HUGE bonus--I could use less oil and food didn't stick. Love it!

Who Wouldn't Want this Wok?

Date:April 10, 2010
I love this wok. The size is perfect for cooking a good sized meal with enough for leftovers - our family is busy, like most families, and being able to cook a healthy meal in one pan in a short amount of time makes our lives so much simpler. I love that this wok comes with a lid which also helps to keep food hot and adds a versatility to the things I can use the pan for. The deep sides make tossing pastas, stir fry, veggies, meat and even sauces a breeze. Clean up is simple, too, which is wonderful. I find that I've been reaching for this pan more and more at each meal. I use it to make hurricane srambled eggs in the morning, a quick stir fry in the afternoon for weekend lunch and pan pasta for supper. Thank you, Calphalon, for a great Wok!

Big Improvement from Smaller Version

Date:April 7, 2010
I have to admit I was a bit nonplussed when I was sent a Calphalon wok. In my single days, I bought a smaller Calphalon anodized aluminum wok years ago and it currently collects dust. It was impractically small and so unbalanced I couldn't center it on a burner. The new one has a nice heft so food doesn't scorch and is well balanced. I like that it has one long slightly curved handle and a loop handle opposite. I love having a glass lid so that I don't have to open the pan to peek and the lid's handle stays reasonably cool. However...the negatives: I get a bit anxious really cranking the heat on nonstick coatings and my two Calphalon nonstick skillets have scratched after less than a year of admittedly heavy use. Another downside of the anodized aluminum is the difficulty in getting Pam (or the like) off and now the company no longer recommends the use of Dormond, even for the exterior.

I've really enjoyed using this wok so far. It conducts heat beautifully, and the finish is great for doing stir-fried vegetables, one of my family's favorites. It's also really roomy and has wonderful high sides, so it's great for any big stove-top dish that tends to fall out, while being stirred, of even the biggest skillet with short sides . A kitchen must-have!

My Finest Piece of Cookware

Date:April 6, 2010
I used this wok for the first time last night and made a dish very similar to the one shown on the wok box -- shrimp and snow pea stir-fry. I love how the pan heated evenly and was able to withstand the high heat. I used a minimal amount of oil & sauce and it all pooled nicely at the bottom of the wok; nothing got burned. I'm looking forward to cooking more healthy, delicious, and QUICK meals that use very little oil.
In addition, clean-up was a cinch! I just took a damp cloth and wiped it clean. Then I used a tiny amount of soap and water to sanitize it. The wok is dishwasher safe, but it looked so pretty I didn't want to cram in the dishwasher on its inaugural use.
The only thing I'll have to improve is my arm strength -- this is one sturdy pan.

Passed All My Tests (so far!)

Date:April 6, 2010
Before I received this wok as a gift, I had been using the same titanium model my dad got me when I moved out. The old one is wonderfully seasoned, lightweight, and big enough to hold enough food to feed my growing family. I've tried using numerous other woks and pans over the past 16 years, but nothing had been as versatile and long lasting as that one pan. I could cook pretty much anything in my old wok-- stir fry, fried rice, soups, stews, spaghetti sauce, noodles, etc. The only problem was-- I don't use much cooking oil (trying to be healthy) and therefore my husband gets to scrub off all the burned on bits of food. So, when I got the Unison Nonstick Sear, I had a few tests for it.
As soon as I washed and conditioned the wok as recommended in the manual, I made the kids' favorite meal-- fried rice... using only the tablespoon of vegetable oil I wiped on the surface. Usually, my husband has to scrub my old wok to get all the hard, sticky bits of rice and egg off after I make fried rice, but this time, clean up was a breeze.
The second meal I made involved boiling dry chinese noodles, a procedure that usually deposits a sticky, hard-to-scrub-off ring at the water line that has to be removed before heating the wok on high heat to cook the rest of the ingredients and finish the dish. Again, no problem getting the wok clean (husband is happy).
The last dish I made was a beef stir fry that usually results in burned on patches of marinade and bits of beef on my old wok. The marinade is super sticky because it's made with soy sauce, sugar, ginger, garlic, and corn starch, but this too cleaned off easily. I was able to get the slices of flank steak to caramelize but not stick to the surface of the wok, again with very little vegetable oil. I was really impressed with the "sear" technology that allows for browning in this nonstick pan. This wok is noticeably heavier than my old one, but it definitely holds heat better.
Two small complaints I have are that the glass cover is quite heavy and the nonstick surface of the wok is very easily scratched. I have hidden it from well-meaning visitors who have scratched my nonstick pans in the past and have used only bamboo spatulas and chopsticks for cooking, but there are already small scratches in the finish. We'll see how it holds up!

Wok-tastic

Date:April 5, 2010
So - amazingly the other day I was saying to my husband (as I tried to saute veggies in a pan and they were going everywhere) - "What I need is a wok." To my utter joy I received my test calphalon product in the mail and it was a WOK! Two nights later I used my Wok to stir-fry some veggies. The wok is a great size - heats evenly - feels sturdy and strong. Only real downside is it is slightly heavy, but I am normally an AllClad user so I am used to that. I normally prefer not to use nonstick, but this product is very nice. Thank you calphalon - WOKTASTIC!

I thought this was a great piece of cookware. Besides the fact that it is nonstick I also loved the glass (see through) lid. It made it quite easy to keep an eye on what I was cooking.
The only downfall to this piece of cookware- which is just a silly critique on my part- is that it felt huge. We have a small kitchen and the handle is so big on this piece of cookware that it felt like it was taking up too much space on my stove top.
Overall though- it is a truly great item and I look forward to using it many more times!

Stirfry sogginess

Overall, the Unison Wok with cover was ok. It heated up pretty quickly. The design is sleek and appealing to the eye. The pan and lid was quite heavy.
I sauteed some mushrooms and bell peppers in olive oil. I thought the cover would help steam the veggies and keep them tender, but the condesation from the lid made them soggy. I am not an avid stiryfry maker though.

Best Wok for All-Around Cooking

This wok is amazing. It doesn't require any "seasoning" like many other woks, it cooks many different types of food quickly, and it cleans with ease. I have made sauces, stirfrys and numerous one skillet meals, all with great results. I am definitely going to add more pieces in the Unison series to my collection of pots and pans!

Awesome Wok!

I received my Calphalon Unison Nonstick 13" Wok yesterday, and was so excited to start using it! I made a Cajun Chicken pasta dish that was great! I was able to sear the chicken without the seasoning sticking to the pan. The vegetables that I added sauteed nicely, and browned without sticking as well. This morning, I tried eggs. They cooked beautifully, and cleanup was a breeze! Thank you, Calphalon!

Great Wok

We have really enjoyed our other Calphalon pans and this one is no exception.
It has a great volume capacity, that easily allowed stir fry for a family of 6.
It's nice that it can go in the dishwasher.

A very nice and versitile wok

I cooked teriyaki chicken on a gas range with this wok. It seemed to take a little longer than my other wok to get up to temperature, and I had to increase the cooking time a little as well. My other wok needs seasoning like a cast iron pan, and I sometimes find it gives a metal taste to the food. The Calphalon didn't have this problem. I also didn't get the same oil splatter problem I often have with the other one. I loved the non-stick surface and clean-up was a breeze. The lid is a very nice addition. I will likely get rid of my other wok and use this one instead.

Love it to cook vegetables

I love my wok. I cooked some veggies with it, and all the veggies cooked pretty quickly and evenly . It's easy to wash and it's good looking :)
It's heavy though, I guess it's a good thing because I have another cookware, really good cookware and it's heavy too.
