brilliant anodised pan. seems to brown onions alot quicker so ideal for curries. I have anodised pizza pans as well,work better that anything else you can get. I have fried a few eggs and although its not ideal for this you only have to used a fish slice to remove the egg bits that are left, so i cleaned it in one minute without leaving a single scratch with a scotch brite as well. My old non stick goes in the cupboard for emregencies only.

People who have described this pan in reviews as nonstick, and complained, are confused. These pans are anodized aluminum inside and out. I bought this pan for sautéing vegetables, not for omelettes, and it is perfect for that. I have an original Calphalon Commercial pan, and the new ones are a bit different. The old one has a smooth, shiny surface, as if it were polished. The new one has a matte finish. Because of this difference, I seasoned my new pan in the oven with shortening, the same way I would for cast iron. It responded very well to this treatment, leaving a smoother surface. I am completely satisfied with this pan except for the handle, which would be better if the diameter were a little larger.

I bought this pan to sear in, but everything stick in it even with oil, I don't know what to use this pan for, I hate to throw it away, but what good is it if everything sticks
