Combining features of a chef's knife and a cleaver, the Santoku is an all purpose Asian-style knife that's ideal for cutting meat, fish and vegetables. The word santoku means "three good things" - a reference to the three cutting tasks it performs so well: slicing, dicing and mincing. The Santoku is designed with kullens, or indentations along its edges, which reduce friction and prevent food from sticking to the blade. The knife also serves as a spatula as you cut, removing cut foods quickly and easily from the cutting surface.

I now own three of this knife...two are in constant use in the kitchen, the other is carefully stored away for later when I want to replace one of the knives I'm currently using. That says a great deal about how pleased I am with everything about this fine cutlery item. I've even had family members and friends try to 'borrow' mine as they too love the look, feel, sharpness, and precision of the knife. (note: I ended up purchasing additional ones for gifts for family) No one will ever give theirs up. It is superior to all of my other 'name brands' and is the one I 'go to' without fail, day in and day out. You will love this blade, I promise!

I initially agonized over which set of knives to start collecting . I talked to my friends who own the top name German and Japanese knives and I researched the different knives on the market in terms of steel and manufacturing. After reading about these products, and countless reviews by consumers, I decided to go with Calphalon. And, I'm very glad I did. I have used my knives quite a bit during the past year and with only an occassional passing of my knives on a steel they are holding their edge great--not even close to a need to sharpen any of these so far. Some of my friends with the more expensive knives initally told me I might be sorry, but as it had turned out I think my friends are second guessing the way they have spent their money on their knives now.
Even over my larger chef's knife, this 7" Santoku knife is the one I seem to reach for at every possible use. The way this knife is balanced and designed it makes quick work of everything from mincing garlic to slicing vegetables, so chopping meat. The person at my local kitchen store told me that they are selling a lot of these particular knives and she is hearing much very positive feedback from those who have purchased it. I am one of those persons now. This is a very high quality knife that holds an edge and is designed very well--this knife is easily my favorite knife.

I am surprised this hasn't been reviewed yet. This was the first Calphalon knife that I bought and prompted me to buy more. The blade is thinner than a chefs knife and has grooves cut in it. Both of these things make it a great knife for slicing things like cheeses and meats. The offset handle makes the knife great for dicing and chopping. No bruised knuckles. The knife is balanced well and I love the feel of the handle. Very comfortable to handle and safe to handle due to the good grip.

This may not be the best knife out there, but I love it. Very comfortable and has kept a nice edge for months. Good price as well. Looking to buy the full set next!!
