This recipe is outstanding! The version offered on the Calphalon website differs slightly from the hardcopy that I received with a recent Calphalon purchase. For example, I didn't serve the dish over noodles, and my my recipe does not call for chicken stock. I used four skinless drumsticks and four skinless bone-in thighs. I created my own breading mixture using flour, rosemary, thyme, cumin, salt, and pepper. The recipe recommends poultry seasoning, but I had other spices on hand. Also, I used the Calphalon Commercial Hard-Anodized 12-Inch Everyday Pan with Lid, not the 2 1/2 quart sauce pan, which the recipe recommended. In addition to the pearl onions, I also added baby carrots to the pan, as I added all of the other ingredients immediately before I placed the entire dish in the oven. I didn't measure the wine or the cognac, but poured liberally until the chicken pieces were close to half covered. I served this dish with mashed potatoes and haricot vert. The combination was perfect. The cooking time was spot on, though I did increase the temperature to 350 because I increased the quantity of chicken compared to my original recipe. This dish is incredibly easy to prepare, the ingredients can be purchased inexpensively, and it will impress you family or guests instantly. I'm definitely making this one again!
